| Gâteau au Chocolat(French Chocolate Cake)¾ c. sugar10 oz. semis-sweet chocolate,
chopped ¾ c. unsalted butter, cut into pieces 2 tsp. vanilla extract 5 eggs, separated ¼ c. flour Pinch of salt Powdered sugar, for dusting Preheat oven to 325 degrees. Butter a spring form pan and sprinkle it with a little sugar. Set aside 3 tablespoons sugar. Place chocolate, butter and rest of sugar in saucepan and simmer over low heat until melted and blended. Remove saucepan from heat and add vanilla extract. Let cool. Beat the egg yolks into cooled chocolate mixture then add flour. Beat the egg whites until frothy. Add salt then increase mixer speed until soft peaks form. Add the 3 tablespoons of reserved sugar. Beat 1/3 of the whites into chocolate mixture then add the rest. Pour mixture into pan. Bake for 34-45 minutes or until cake has risen and toothpick inserted in middle comes out clean. Dust cake with powdered sugar. Coach Cecile Canqueteau-Landi France |
